Have you avoided pancake day because of your intolerances? The folk at baking company Mrs Crimble's may have come up with the solution to your problem. Their new Pancake Mix is gluten and wheat free and as you have to add the eggs and milk yourself, you could also make them dairy free by adding soy milk or something similar.

Do they taste different to the classic mix? Well my OH and I are lucky not to have any intolerances and thought they were pretty tasty. As rice and maize flour is used, the pancakes had a slightly grainier texture than your average and were a little more yellow, but I think once the topping is on most people would be hard pushed to notice the difference.

One warning: be careful with your portion control. The pack said it made ten medium pancakes and we only got six. Still, at £2.19 a pack it's still a pretty cheap dessert for two (or three!) people. I recommend toppings of nutella, toffee and banana and of course the classic lemon & sugar.
